Chocolate Mug Cake

6 tablespoon ground oats or 2 tbsp coconut flour
1 teaspoon baking powder
3 tablespoon unsweetened cocoa powder
A pinch of sea salt
2 tablespoons Greek yougrt
1 tablespoon vanilla extract
2 tablespoon honey
6 tablespoons almond milk
2 squares of good quality dark chocolate, cut into small chunks

  1. In a bowl, mix together everything but the dark chocolate and make sure everything is combined.
  2. Divide half of the mixture between 2 mugs.
  3. Divide the chocolate chunks between the 2 mugs and then pour the rest of the cake mixture
  4. Put each mug in the microwave separately for 1 minute 30 seconds.

Cajun Eggplant Fries

1 eggplant, sliced into fries
1/2 teaspoon cayenne pepper
1 teaspoon cumin
1 teaspoon black pepper
1/2 teaspoon nutmeg or cinnamon
dash of salt

  1. Preheat oven to 350 degrees.
  2. Mix spices and salt and set aside.
  3. Soak eggplant (cut) in a shallow bowl of salt water to get rid of the bitterness and pat dry. Dip into spice mixture or just sprinkle it on the fries. Place fries onto greased baking sheet.
  4. bake for 10-15 minutes – flipping halfway

Banana "Ice Cream"

frozen bananas
almond milk (optional)
unsweetened cocoa powder
nut butter of choice

  1. Place frozen banana pieces in the bowl of a food processor fitted with a steel blade.
  2. Process bananas until they create a frosty, yet creamy puree.
  3. Serve immediately or place in a bowl covered with a piece of parchment paper to harden.
  4. if desired, blend with almond milk, nut butter, and cocoa for a different flavor
